We have an obsession with canned pineapple in our home. We’ve made pineapple cream cheese wontons and even a pineapple burger on the grill. It’s just an easy ingredient to use when on a tight budget.

Baked Hawaiian Chicken – Sort Of

What we are loving right now is the combination of chicken and pineapple. Marinating your chicken in pineapple juice creates such a juicy, delectable piece of protein that you can’t resist.

This recipe reminds me so much of all the Hawaiian dishes is see all over Pinterest. Hawaii is one of my dream places to visit, so this baked pineapple chicken recipe fuels my dream every time we eat it.

Why Pineapple Juice for Marinade?

Did you know that pineapple juice is one one the best natural marinades? The enzymes in pineapples infiltrate any tough areas in the protein and immediately turn them into tenderness.

One big tip is to only marinate your chicken for a short amount of time when using pineapple juice. This is why this pineapple chicken recipe is perfect for busy weeknight meals.

The chicken will only need to marinade for 30 minutes, tops. I suggest letting it marinate for at least 15 minutes for maximum results. That’s just enough time to put your rice in the rice cooker, pre-heat the oven, and chop up your vegetables.

Using Quality Chicken

We went with our Perdue Farms Harvestland organic chicken thighs for this recipe. When making quick and easy meals, it just makes sense to invest in quality protein. Simple dinners with the best quality products are sure to satisfy every family member.

Since we have been able to figure out how to afford organic chicken when you have a tight budget, we’ve definitely seen a difference in the quality of our meals. They are still cheap and easy, but taste way better.

Easy Recipe With Flair

One of the best things about this recipe is being able to use the whole can of sliced pineapple. The juice is used for the marinade, and the sliced pineapple rings are used as little nests for your chicken pieces.

We do use a large cast iron skillet for this recipe, but you can use a baking sheet if you don’t have cast iron. The pineapple may not come out as caramelized, but it will still be delicious. You can find our cast iron skillet on Amazon and on Target’s website.

Adding A Little Spice

Also, this is a 4 ingredient recipe, but you can make it 5 ingredients if you want to add a little black pepper to the top. I won’t tell anyone. The sriracha gives the chicken a good spice, but if you want one more layer of flavor, feel free to add ground black pepper.

Easy Pineapple Chicken Recipe

Easy Pineapple Chicken Recipe

This 4 ingredient easy pineapple chicken recipe will have you licking your fingers once you're done eating! Kid-friendly and made in less than 30 minutes.
Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 1 teaspoon sriracha sauce
  • 1 15-oz can sliced pineapple, juice reserved
  • 1/2 cup soy sauce
  • 6 to 8 Perdue Farms Harvestland organic chicken thighs

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Place sriracha, pineapple juice, and soy sauce in a large bowl. Stir together.
  3. Rinse chicken thighs, then place in bowl. Allow to marinate for 15 to 30 minutes.
  4. Place pineapple slices in cast iron skillet, or cookie sheet. Set aside.
  5. After 15 or 30 minutes, drain marinade and place chicken on top of pineapple slices.
  6. Bake for 30 minutes, or until juices run clear from chicken.
  7. Serve and enjoy!
