Hi. I’m officially obsessed with my Instant Pot, and this Instant Pot Creamy Chicken recipe isn’t helping me addition one bit. It’s so easy!
This Instant Pot chicken dinner is very no frills. I basically looked in my pantry and fridge, grabbed items I use the most, and threw them into the Instant Pot.
Frozen Chicken Breasts Are A Weeknight Dinner Staple
Confession. I totally used frozen chicken breasts to make this creamy chicken. I was working so hard one day, that I forgot to take the chicken out to thaw. I had Perdue Farms Chicken Breasts in the freezer, so I was able to grab a bunch of them for dinner, and use them immediately.
Truthfully, this is why this is an Instant Pot recipe and not a stovetop recipe. I needed to make dinner in about 30 minutes, and I knew you can cook frozen chicken in the Instant Pot. Bless it.
All of the ingredients are very inexpensive. The are cheap stockpile items I keep on hand at all times, so we end up having this creamy chicken recipe quite a bit throughout the year.
Hey! This Instant Pot Chicken Recipe Sounds Familiar
It does? Well of course it does! There is a popular chicken recipe that uses a packet of ranch dressing, and cheddar cheese. This is similar to that, except without the ranch dressing. Oh, and we changed the cheese to mozzarella.
Also! We’re using Italian dried herbs and seasoned salt. Like I said, it’s full of cheese stockpile items you probably already have in your pantry.
Feel free to use whatever dried herb you have in your spice rack. If you don’t have seasoned salt, but you have garlic salt or adobo seasoning, use that instead!
The ingredients are pretty versatile for this recipe. You can even switch out the mozzarella cheese for any of your favorites. The key here is to get a delicious dinner on the table FAST.

Noodles, Rice, or Zoodles will do
When I make the creamy chicken, I add our vegetables of choice right into the pot. Fresh spinach, frozen spinach, sweet peas, corn, or even vegetable medley. Any vegetable will do for this recipe.
We love to eat this chicken dinner with rice, but it is also divine over pasta.
Working with a low carb diet? Serve the creamy chicken with zucchini noodles, carrot noodles, or even cauliflower rice. You can’t make a bad decision here!

This Instant Pot Creamy Chicken dinner is perfect for those busy weeknights when you forget to thaw your chicken!
- 2 pounds boneless chicken breasts
- 1 tablespoon seasoned salt
- 1 teaspoon dried Italian herbs
- 8 oz cream cheese
- 1/2 cup water
- 1 cup cubed or shredded mozzarella cheese
- Place the chicken and cream cheese in the Instant Pot. The chicken breasts can be frozen.
- Add water.
- Sprinkle the seasoned salt and dried herbs on top of the chicken and cream cheese.
- Place Instant Pot on Manual high pressure for 15 minutes. Do a quick release as soon as it's done.
- Remove the chicken from the Instant Pot, place on a plate, and shred. You can also use a hand mixer or stand mixer to shred it.
- Place shredded chicken back into the Instant Pot.
- Add the mozzarella and your vegetable of choice.
- Stir together, serve immediately, and enjoy!
