Why canned pineapple instead of fresh or frozen?
We enjoy canned pineapple because it’s so versatile. Whether you get the tidbits, chunks, rings, or crushed pineapple, they can all be used in so many ways.
Since I’m allergic to fresh pineapple, the only way I can get my fix is through the canned version. So, I have created an embarrassing amount of recipes from canned pineapple. It’s only natural.
We do stock frozen pineapple in the freezer during the summer, for smoothies. But, truthfully, very cold canned pineapple can be a great substitute for frozen pineapple.

Oh, this isn’t a surprise to you? Yeah, me neither. Ha! Pineapple and pork go together like peas and carrots, peanut butter and jelly, and all of our favorite food duos.
Besides putting pineapple rings on top of ham, we love making pork loin in the slow cooker. Crushed pineapple and a team of amazing pantry staples, like red pepper flakes, make this a consistent winner.
Trust me. That combination will blow your mind. It’s a recipe I use quite a bit when the weather gets cooler.

Yup, I totally did it. I’ve always loved my slow cooker peach cobbler recipe, so substituting peaches for pineapple just made sense.
Actually, I hadn’t purchased peaches all summer, but was craving cobbler. The canned pineapple saved me.
I had to adjust the recipe a bit to work with the already cooked pineapple, but it was so delectable. You have to give it a try, if you love cobbler and pineapple.
Make It Into Salsa
OK, before you try the recipe I created, please note it is VERY hot. Spicy pineapple salsa is exactly what I was going for, but even my spice-loving husband said it was up there on the “head on fire” level.
This made me very happy. If you want to give it a try, remember to take the seeds out of the pepper. Actually, only put half of the pepper in the Instant Pot.
Or the whole pepper. Whatever. Live dangerously, friend.

This recipe is an oldie but a goodie. I created it when we were dead broke, and eggs were something we couldn’t afford to use all willy nilly in a dessert.
