mmmmm…..peachy chicken! Finally got to make this again tonight and I now remember why I loved it so much! This time I made it in the oven instead of the usual crockpot route. I kinda over-cooked it a bit because I forgot about it but hey, it was still mighty tasty. We had it with my absolutely easy garlic green beans(thawed frozen beans sauteed in a tablespoon of oil and tablespoon of garlic, with a few shakes of salt and pepper). Here’s my recipe:
4 skinless boneless chicken breasts(or thighs, if you’re sassy like that)
2 peaches, peeled, pitted and sliced
1/2 cup brown sugar
1/4 tsp ground ginger
1 tablespoon apple cider vinegar
a heavy pinch of black pepper
Preheat oven to 350 degrees. Place the chicken in an 8×8(or even a 9×12) dish and top with sliced peaches. Mix the brown sugar, ginger, and black pepper in a small bowl. Now top the peaches and chicken with the mixture evenly and drizzle the apple cider vinegar over the brown sugar mixture. Bake in oven for 30 minutes or until the juices in th chicken run clear.
Crockpot instructions: Same steps as above but add 1/4th cup water to the pot to prevent the chicken from scorching. Place on low for 8 hours, or on high for 5 to 6 hours.
