Are you a fan of the salty and sweet combination? I have to admit, when football season shows up, my love of this culinary tag team increases. I purposefully look for sweets that give me a big of salt with my bite, like this peanut butter chocolate icebox cake.
This recipe for Peanut Butter Chocolate Icebox Cake is inspired by that awesome duo. The peanut butter blends well with the whipped topping, and here’s the kicker: the layers of the icebox cake are made with RITZ® Crackers! I found all of my ingredients at my local Acme. The RITZ® Crackers were located in the snack aisle, and the Coca-Cola was right in the soft drink aisle. If your Acme has the Ritz® Crackers Football Limited Edition packages, grab them. My Acme has awesome displays to celebrate that big game that’s coming our way in a few weeks. I loved see RITZ® Crackers and Coca-Cola on the displays. They are essentials for a football party!
Chop up a bar of semi-sweet chocolate. I love to used a serrated knife to chop chocolate, because it just looks so gorgeous! Set aside your chocolate for later.
In a large bowl, add peanut butter and half a container of whipped topping. Stir it together like nobody’s business. We’re trying to get the peanut butter to be lighter, so don’t worry about ruining the whipped topping. Once that’s incorporated, do the same thing with the second half of the container.
Now, gently fold the second container of whipped topping into the peanut butter mixture. It may take a few minutes, but it’s worth it.
Take that chopped chocolate and fold that into the peanut butter mixture. Try not to taste it while you do this. See? I said try, instead of don’t. I know you’ll taste it. You’re only human.
In a springform pan, line the bottom with RITZ® Crackers. Top that layer with one third of your peanut butter and chocolate mixture. Top that with another layer of RITZ® Crackers. By the end, you’ll have 3 lovely layers of RITZ® Crackers, and 3 layers of the peanut butter and chocolate mixture.
It’ll look so delicious, that you’ll want to eat it right away. But, you can’t. You have to wait 4 hours to overnight for your cake to set. I know. I KNOW. But It’ll be worth it.
Once it’s done, you can slice it, serve it, and add a beautiful RITZ® Cracker at the top of each slice, just to provide that touchdown presentation. See what I did there?
Don’t forget to serve each slice with a Coca-Cola! The salty and sweet combo goes so well with a tall bottle of Coca-Cola. Trust me on this.

Peanut Butter Chocolate Icebox Cake
Ingredients:
4 oz semi-sweet chocolate bar, chopped
8oz creamy peanut butter
2 8oz tubs whipped topping
2 sleeves RITZ® Crackers
Instructions:
In a large bowl, place half the contents of one defrosted tub of whipped topping. Add peanut butter, and stir together until fully incorportated. Add second second half of the whipped topping container, and stir together.
Gently fold in the second container of whipped topping, incorporating the peanut butter mixture until there are no more while streaks.
Add the chopped chocolate, and gently fold into the mixture.
Line springform pan with RITZ® Crackers, filling in any gaps with broken pieces of crackers.
Place one-third of the peanut butter and chocolate mixture over the first layer of crackers. Spread evenly, making sure the mixture reaches the sides of the pan.
Add another layer of RITZ® Crackers on top of the peanut butter and chocolate layer. Top with second layer of peanut butter and chocolate mixture.
Add last layer of RITZ® Crackers, then top with last layer of peanut butter and chocolate mixture.
Cover with plastic wrap, and place in the fridge. Let sit for 4 hours to overnight.
Once completely chilled and set, slice, top each slice with a RITZ® Cracker, and serve. Enjoy!
