Super Easy Strawberry Cookies

You just can’t go wrong with an easy cookie. One that’s quick to make, baked just right, and provided little to no effort from you. This is one of those cookies. It’s base is boxed cake mix (don’t you just love cake mix based treats?) and in honor of the holiday of Love, Valentine’s Day, I decided to make strawberry cookies with a beautiful pink hue. I used white chocolate chips in the dough, but if you are a lover of the strawberry and chocolate combo, you can use milk or even dark chocolate chips. Feeling even saucier? Add in half a cup of chopped nuts to the mix. You can’t lose with any of these combos!

Super Easy Strawberry Cookies

1 box strawberry cake mix
1 cup white chocolate chips
1/2 cup chopped nuts (optional)
1/2 cup butter, room temperature
1 egg
1 tablespoon vegetable oil
1 teaspoon vanilla

In a large bowl, place the strawberry cake mix and butter. Mix together.
While the dough is mixing, put in the egg, oil, and vanilla, then mix completely.
Turn off the mixer and fold in the chocolate chips and nuts(if applicable).
Drop a tablespoon of dough onto a cookie sheet, press down gently to flatten a bit, and bake for 10 minutes.
Take the cookies out of the oven and let them cool a bit on the cookie sheet before transferring to a cooling rack.
Serve to your sweetheart, or do like I did, and make them into ice cream sandwiches!
