Do you have a sweet and simple dessert that really makes you happy? Lemon meringue pie is that dessert for me. The problem: nobody wants to bake in the summer. So, this idea of a lemon meringue pie sundae makes my heart sing.
I have to admit, this “recipe” was created because I had a craving. I didn’t want to turn on my oven and have it bake a lemon meringue pie for almost an hour, but I needed the elements of my favorite pie in my stomach. Cravings are powerful.
Lemon Meringue Pie Lovers Unite
What makes this lemon meringue sundae so fun is that it uses lemon flavored cookies, and roasted marshmallows. If the crunchy yet smooth meringue part of a lemon meringue pie is your favorite, then you’ll be pleasantly surprised by this.
The ingredients are super simple, too. Vanilla bean ice cream, store bought lemon curd, marshmallows, and Voortman Bakery lemon wafers. The wafers give the sundae the perfect crunch, while sticking with the lemon flavor theme.
Making A Sundae – The Fun Way
Lay 2 pairs of Voortman lemon wafers on a plate or big bowl.
Put 3 or 4 scoops of vanilla ice cream on top of the wafers. We usually do one scoop per person.
Next, line the sides of the ice cream scoops with Voortman lemon wafers. I used 3 per section, so 12 overall.
Warm up your lemon curd (I put it in the microwave for 30 seconds), then pour over the ice cream scoops. The curd will fall down into the little crevices. THAT’S A GOOD THING.
Put 10 to 12 marshmallows on a cookie sheet, and broil in your oven. This should take only 1 or 2 minutes. Don’t forget about them, or they’ll burn!
Slide the broiled marshmallows on top of the ice cream scoops.
Now, eat! Make it messy. Dig all the way into the sundae, and grab those wafers at the bottom on your spoon. Those wafers will be covered in lemon/cream/marshmallow goodness. Complete heaven.

Lemon Meringue Pie Sundae
Serves 4 to 6
Ingredients
1 package Voortman Bakery lemon wafers
1 pint vanilla bean ice cream
1/2 cup lemon curd
10 to 12 marshmallows
Instructions
Turn your oven to broil.
Place lemon wafers on bottom of large plate or bowl.
Put ice cream scoops on top of wafers.
Gently push lemon wafers on the sides of the ice cream scoops.
Scoop lemon curd in a small microwave safe dish, and warm up in the microwave for 30 seconds.
Pour lemon curd over the top of the ice cream scoops.
Line up marshmallows, two by two, on a cookie sheet. Place in oven for 1 to 2 minutes, or until lightly browned.
Slide roasted marshmallows on top of ice cream scoops.
Grab your spoons and enjoy!
