Mini Oreo Cheesecake With A Sour Cream Secret

When making cheesecake, one of the fool-proof ways to ensure it’s going to taste phenomenal is sour cream.

The combination of cream cheese and sour cream creates a silky smooth texture to the mini cheesecakes. Pair that with the chocolate goodness of Oreo cookies, and you have a dessert you’ll add to favorite list.

There are also Oreo cookie pieces sprinkled throughout the cheesecake filling, so you’ll get a cookies and cream experience with this recipe.

Here are the key ingredients of this Mini Oreo Cheesecake:

  • cream cheese
  • sour cream
  • pure vanilla extract
  • eggs
  • Oreo cookies, chopped into small pieces

Can I substitute the Oreo Cookies for Something else?

If you aren’t interested in having an Oreo crust, you can substitute them for any other sandwich cookie.

I’ve used sandwich cookies with a strawberry filling for a fun way to turn these into Valentine’s Day cheesecake bites.

Can I make this a different way?

You can try to make this as a full cheesecake. If you’d like to do this, double the measurements of each ingriedient, and bake the crust for 10 to 12 minutes.

Bake the cheesecake filling for at least an hour, or until the top is a light golden brown.

I highly suggest using a springform pan to make this a full cheesecake. Here’s the springform pan I use for things like cheesecakes, icebox cakes, and more: My favorite springform pan.

Oreo crust ingredients

  1. 16 chocolate oreo cookies, creme removed
  2. 3 tbsp sugar
  3. ¼ cup unsalted butter, melted

Cheesecake filling ingredients

  1. 2 – 8oz cream cheese, softened
  2. 1 cup sugar
  3. ½ cup sour cream
  4. ¾ tsp pure vanilla extract
  5. ⅛ tsp kosher salt
  6. 2 large eggs, room temperature
  7. 10 Oreos chopped into small pieces
  8. 1 package of mini Oreos for topping
  9. Optional: 1 ½ cup confetti heart sprinkles

Whipped cream ingredients

  1.  1 ½ cup heavy whipping cream
  2. ¼ Powdered Sugar
  3. 1 large piping bag fitted with a star tip

Instructions

  • Pre-heat oven to 325°F.
  • Line a cupcake pan with cupcake liners.
  • Crush the cookies into fine crumbles using a food processor or blender, then pour into a bowl.
  • Mix the melted butter and sugar into the crushed cookies.
  • Scoop 1 tbsp of the crust into the cupcake liners.
  • Using a flat bottom cup, lightly press the crust into a flat disk
  • Place in oven and bake the mini crusts for 5 minutes.
  • Set aside to cool while you make the cheesecake filling. Keep oven at 325°F.
  • Using a standing mixer, beat together the cream cheese and sugar until smooth and creamy.
  • Beat in the sour cream, vanilla, and salt until just combined.
  • Beat in the eggs, 1 at a time until combined.
  • Fold in the chopped Oreos and 1 cup of the confetti sprinkles (optional) into the cheesecake batter.
  • Scoop about ¼ cup of the cheesecake batter into the cupcake liners.
  • Bake in the oven for 17-21 minutes or until the edges start to turn a light golden brown color and the center is set.
  • Allow the cheesecakes to completely cool.
  • To make the whipped cream, use a large bowl and hand mixer to beat together all ingredients stiff peaks form.
  • Pipe dollops of the oreo whipped cream onto the top of the cheesecakes.
  • Top with a mini oreo and confetti heart sprinkles. Enjoy!
