One Pan Beef Enchiladas for an easy weeknight meal

One pan beef enchiladas seem to always be a favorite in our home. I remember when we were just family of 3 and I would make enchiladas for my husband and son. Both of their faces would like up when I told them what was for dinner.

You just can’t go wrong with a simple meal like one pan beef enchiladas, especially when the ingredients are right in your pantry and fridge.

Here are some of the magical ingredients:

  • can of red enchilada sauce
  • Mexican-style shredded cheese
  • a pound of ground beef

What can I substitute in this recipe?

If you’re cutting down the amount of red meat your family eats, you can easily substitute ground turkey or ground chicken for ground beef. You can also use black or pinto beans to make this a great vegetarian dish.

If you prefer green enchilada sauce instead of red, feel free to use it! This recipe is very versatile.

Can I make this a different way?

The idea is to bake this in the oven to make it an easy weeknight meal. But, you can also make this in the slow cooker.

I would place it on low, spray the insert with non-stick spray before placing the enchiladas inside, and use 2 cans of enchilada sauce. Wait until half an hour before serving to add the cheese on top. Once it’s melted, it’s time to eat.

One Pan Beef Enchiladas

Ingredients

  1. 1 pound ground beef
  2. 1 cup chunky salsa
  3. 10-ounce can of red enchilada sauce
  4. 8 soft flour tortillas (8 inch size)
  5. 2 cups Mexican-style shredded cheese

Instructions

  • Preheat the oven to 350 degrees and spray a 9×13 inch baking dish with nonstick cooking spray.
  • In a large skillet, brown ground beef over medium heat until thoroughly cooked. Drain excess grease. Set aside.
  • Pour half of the enchilada sauce in the bottom of the baking dish.
  • In a medium mixing bowl, mix together the cooked ground beef and salsa.
  • Spoon about ¼ cup of the beef mixture and 2 tablespoons of cheese into each tortilla shell. Wrap tightly and place into the baking dish.
  • When all of the tortilla shells are wrapped and placed inside the dish, sprinkle the remaining cheese on top of the dish. 
  • Place tin foil over the dish and bake for 30-35 minutes.
  • When cook time is up, remove the tin foil immediately. Allow the dish to cool for 5-10 minutes before serving.

Notes:

  • Do not try to overstuff your tortilla shells. ¼ cup of the beef mixture is plenty for each tortilla. 
  • Serve with sour cream, queso and/or additional salsa.
